Snow, 3D, homemade BBQ chicken pizza!

What a great weekend!! Strange at some points. On Saturday, Sofia went to a Baptism and got to party it up with the abuelos. She was dancing to all the songs and the mariachis at the party even dedicated a song to her!! So fun. Since Sofia was with the Abuelos, Vince and I took advantage of it and went to see Monsters vs. Aliens in 3D and also went to Basta to have dinner. Funny that we went to see a little kids movie- shows that we are STILL YOUNG! We had a great conversation about our upcoming plans to possibly Disney during dinner. Here's a picture of us at the theater with our 3D glasses!!

Sunday we woke up with fresh snow on the ground. Apparently something went wrong with spring. Even the birds were dumbfounded just staring at the trees and the ground. We even had a bird go into our garage, but I scared it off with our air horn!


Sunday I decided to make a homemade BBQ chicken pizza. I turned out pretty yummy! I used the Pillsbury pizza dough, Sweet Baby Rays sauce, onions, green peppers, and chicken. I actually made two and I hope that's what we have for dinner tonight, yummy!

Vince is a Knight

I joined the Knights of Columbus last night. It is a fraternal organization in the catholic Church that does a lot of volunteer work in the community and is just a good brotherhood group for Men in the church. I joined the Spalding Chapter #427 that is on Radnor Road off of Willow Knolls Rd. in North Peoria. They have a nice hall that is about 7 years old. It has a pretty big banquet hall and dance floor with A pretty cool bar too. I might reserve the hall for June 2030 for Sofia's wedding reception :)
Tonight we are going to go to the Fish Fry there from 5-7. It will be nice to have Sandra and Sofia meet the other knights. Have a good weekend. This is Sir Vince signing off. Just kidding you can still call me Vince.

Bummed

It's a crappy day for Sandra. I just want this cough to go away. My sides hurt from coughing, I haven't ran in almost 2 weeks because I have cough attacks. I picked up an application for Race for the Cure, but I don't see the light since I haven't been running.

IT COULD ALWAYS BE WORSE.


I want to go to Disney World, that would cheer me up. maybe.

Oh the weekend is over ....

We got lots of stuff done this weekend, but it started off with me going home sick on Friday. I could talk (but like a man) and my head was hurting and I just couldn't do it. I went home and slept for 2 hours. Felt better, but all weekend I was coughing and coughing and coughing.

Saturday since I was feeling crummy, I decided to make veggie soup. Sofia loved putting in the veggies into the cooking pot and checking how the veggies were doing. I combined all the veggies I had: red & green peppers, onions, peas, corn, mushrooms, broccoli, etc. After cooking it all we liquified it in the blender. It was seasoned with oregano, parsley, garlic salt, and cilantro. Sofia liked it and ate her entire serving!

On Sunday morning Sofia and I went to Target to do some shopping. I purchased a summer dress! I love the dollar section up front because there's always cute stuff to look at. Here's Sofia with $1 bunny ears!
Then Sunday afternoon, the three of us went to the mall to do some shopping as well. We got some new shorts for Vince since his old ones... ripped. At the mall we went to a store that has kid furniture. Sofia thouht the duck rocking chair was fun and she also liked the bouncy ball that she could bounce on that had a monkey cover. Everything was way out of our price range, including the doll house with the elevator.
The barn that you see in the backgroud is actually a table. The chairs were four different animals: a sheep, a horse, a cow, and a chicken. Very cute idea!

ELMO fun
















I have been entertaining my students all day with my new gadget. I "accidently" found an ELMO to use in my classroom. It's been quite fun.







My throat is killing me and I'm going to the MedPointe after school, hopefully I can get something for it. Sofia and I had a great time last night. We did get to play Ping Pong and our friend Jane came over with Banana Bread! Yummy! It's Thursday and the family is back together (Vince, Sofia, and myself). I'm not sure what we'll do... Survivor is on tonight so we'll watch that for sure... oh and I did get to make Chicken Alfredo so maybe leftovers??

How does a squire squire?

My head is full of so much stuff that I can actually say that I'm not bored at the moment. I set aside a few minutes to organize my thoughts here on the blog. Here's a look at my thoughts for the day.

Work- Today I started two different novels in two different classes. In Spanish 3 we started Don Quixote de la Mancha. I passed out the vocabulary list and gave an introduction to the author and the story line. In Spanish 4 I did the same thing only on La Dama Del Alba. I had the chance to use an ELMO (a really cool tech tool to project things onto the screen), but it failed so try number 2 tomorrow. In Spanish 1 we are going over the verbs like Gustar and in Spanish 5 I am doing a mini lesson on medical terms for the students. Snowball (the club I sponsor) will soon be planning a pizza party for sometime in April... what movie should we watch? Suggestions are always welcome..

Play- Man of La Mancha is going well. We had practice on Monday. I don't have practice for 2 weeks. Nice. I'm learning my Soprano part very well and I hope that this itchy throat thing goes away, otherwise I'm going to sound really bad.

Home- Tonight is Sofia and Mami night. I think I will attempt to play Ping Pong with Sofia. We tried a few weeks ago and she really liked it. We may also color and of course watch America's Next Top Model. Oh, dinner.... hum maybe I'll make Chicken Alfredo. That sounds yummy. We did some yard work yesterday, that was fun. Maybe Sofia and I will play in the dirt some more if the weather is nice this afternoon.

Exercise- I'm up to 2 miles. wow.... the race that I'm signing up on is 3.1. I have to exceed that so it seems easy. I plan to up it to 4 miles in the following weeks. The race is May 9th. wow. I better get running.

Vince Job Update and St. Patrick's Day

Well, unfortunantly Vince did not get the WMBD job, but we're sure there will be more opportunities out there. For now, he is still at HOI. Waiting everyday to hear if he has been let go. There is talk of starting up a family business with my dad, not a guaranteed, but perhaps an option. Vince and my dad have been talking... we'll see.

In other news, Today (March 17th- St. Patrick's Day) is Vince and my anniversary. We started dating on St. Patrick's Day in 2002. Wow! We met on a mission trip in Ely, MN and the rest is history. We had a great time there and I hope we get to visit in the future.



St. Pius X- Church in Babbitt, MN where we prayed at night. The church directory is where our friends lived. We all stayed at their place and I remember we had a snowball fight with some of the neighborhood kids. I remember we said the rosary here at night and Paul (now Father Paul) would lead us in prayer in front of a beautiful statue of Mary.







St. Anthony's- Church in Ely where we talked to the youth group about how this was our spring break trip and that we went north instead of south to party.
